Cinco De Mayo Meal Prep Ideas

As the seasons move from winter through spring into summer, it’s only natural that our appetites change, and also the food that we want to eat. Spring can often be difficult, as neither winter casseroles and hot comforting food nor fresh and vibrant summer salads seem to be fitting.

However, 5 May is Cinco de Mayo, an annual celebration in Mexico that is celebrated around the world, to commemorate the Mexican Army’s victory over the French Empire at the Battle of Puebla, on 5 May 1862.

It might sound like a perfect opportunity to indulge in a few margaritas and sink a few cervazas, but it can also provide some inspiration for some spring food prep. What’s better than some hot, spicy food, and some fresh salad and veggies?

Burrito bowls might just be the answer for you if that sounds appealing. They’re packed with protein, grains and full of nutritious vegetables. They can be easily prepped, and just as easily popped in the microwave to reheat when you’re ready.

There are a wealth of burrito bowl recipes available, but to be able to prep them for a week’s worth of delicious meals, place the meat, rice, beans, and fajita vegetables into one bowl to be heated up, and all the cold ingredients into another.

Then when you’re ready to enjoy a fresh burrito bowl, simply heat the chicken, or your choice of meat, and top it off with cold salad, guacamole, and sour cream.

If you’re counting your calories, opt-in for brown rice instead or if you’re feeling a little generous, go ahead and add a handful of cheese on top of the lettuce and treat yourself.
